One way you could go is to use a program like Swinsian in place of iTunes. It has many features and plays far more music formats.

You could also use it to simply tag your music then import the results into iTunes.

You use Plex don't you, Don? It looks like Plex still manages music as well as video, so it might be another option.

Sorry I don't have better answers for you, I'm still using Mojave and have yet to dip my toe into Catalina, but I'll get it running sometime here soon in a VM to play with it.

I'm not ready to make the switch yet on my main iMac, I still have a few 32-bit legacy apps to run, Catalina is still a bit buggy, and I'm not looking forward to dealing with some of the issues like you've seen with the new Music app.

I'm holding out hope that Big Sur will fix some of the issues with Catalina without introducing too many new bugs of its own.
