I've never given my pancakes any thought but after realizing people are always raving over them I thought I would post. Tasty and light, just the way I like them. 1/2 cup cake flour 1/2 cup all purpose flour 1 T sugar 1/2 cup sour cream 1/2 t baking powder 2 eggs separated 1/2 cup milk a bit of vanilla extract pinch of salt 4 ozs melted butter Sift together dry ingredients. Add egg yokes, vanilla, melted butter, milk and sour cream and mix. Beat the egg whites until somewhat stiff, add a 1/3 to mixture and mix well. Fold in the final 2/3 and you are ready to go. This makes about 8 3" cakes. These are basically Wolfgang Puck's Postrio pancakes with vanilla added.
