Anyone have any good, easy cookie or bar recipes I can use for the holidays? I've made it a tradition that each holiday season I have my grandson (he's now in 6th grade) over to bake cookies with Grandma. This year I have another one who will be "creating" - he's a few months short of three.:) I'll have a friend, my daughter-in-law, and the other grandmother. Any ideas on organization or any other tips? I'm thinking I'll have some dough made up ahead of time, like refrigerator cookies. Then I'll buy some mixes that I'll let my older grandson mix. As far as sugar cookies, I'm thinking the drop kind that you put icing and sprinkles on rather than the ones you cut out. I plan to make a lot of different things so I can send some home with everyone. Again, any thoughts, ideas, or recipes would be greatly appreciated.

I have one I'd like to post, but I'll have to do some digging to find it.

It's a cream sandwich cookie that is light and fluffy and delicious.

Great. It was going to be this Saturday; however, we have to change it for one of the grandsons can't make it. So, it'll be at least a week or more. Appreciate your time and effort in helping.

Here you go lexi.........these are really delicious, and pretty too.

I also do Rosettes at Christmas time.

Delicate pastry like rounds with a rich filling. A lovely addition to the cooky trays for a tea or reception.

Cream Wafers

1 C butter or margarine
1/3 C whipping cream (35% butterfat)
2 C white flour
granulated sugar
Creamy Butter Filling (below)

Mix butter, cream, and flour thoroughly. Chill 1 hour. Heat oven to 375 degrees. Roll dough 1/8" thick on lightly floured board. Cut into 1 1/2" rounds. Transfer to waxed paper heavily sprinkled with sugar, turning to coat both sides. Place on un-greased baking sheet. Prick in 4 places with fork. Bake 7 - 9 minutes, or until slightly puffy. Put two cooled cookies together with filling.

Makes about 5 dozen 1 1/2: cookies.

Note: Self rising flour can be used in this recipe.

Creamy Butter Filling:

Blend 1/4 C soft butter, 3/4 C sifted Confectioners' sugar, and 1 tsp. vanilla. If desired tint with your favorite coloring. (I do red and green at Christmas.)

Seriously......I do hope you give them a try some day. They are the kind of cooky that just sits there and melts in your mouth.

In fact, I've been known to make them extra small.......bite size.

You've probably already made cookies with your little Grandson Lexi, but wanted to post this page I found this morning just in case. I've been very good so far and have only had one Christmas cookie so far this holiday. A friend gave me a package of almond bars and Devil's food bars. I took one of each, cut them in half and shared with my hubby. One half for him, one for me. I liked the Devil's Food bars but that's because I'm a chocoholic.

Some of the cookies on the page look pretty good to me.
